Fish Cakes/Accras Recipe

It's Tasty Thursday! How have you been? How is the exciting, adventurous new near treating you so far? Continue exploring new things in 2018. Yes! Yes! its all about the NEW!

By the way, I am in the mood to eat something delicious tonight. I have some cod/salt fish at home and some seasoning from my garden; perfect for preparing fish cakes/accras.

Just thinking about it makes my taste buds go crazy!! Have you tasted fish cake/accras? It is a salt fish fritter prepared with salted cod.

Makes a delicious starter or appetizer; or can be served with a spicy dipping sauce. Yummy! Something to ponder when you're thinking of hosting your next party; your guests will definitely enjoy.

I am looking at the clock, it will soon be time to head home. Woohoo! Foodie on my mind!

In the meantime, this recipe is for you:

(20-30 Fish Cakes)

  • 1/2 lb boneless salt fish.

  • 2 teaspoons baking powder (optional) I don't use baking powder.

  • 1 cup all-purpose flour (sift the flour).

  • 1 tablespoon parsley (chopped).

  • 2 cloves garlic, (minced).

  • 2 tablespoon spring onions (chopped).

  • 1 teaspoon Caribbean hot pepper sauce (I use cayenne pepper).

  • A dash of ground black pepper.

  • ¼ to 1/2 cup water.

  • Coconut oil for frying (about 2-3 cups).

In a pot cover the salt fish with water and bring to a boil. Reduce the heat and simmer for about 20 minutes. Repeat the process twice to ensure the salt fish is not too salty. Or if you prefer, soak the cod overnight in cold water to rehydrate it and remove excess salt.

Drain the fish and rinse under cold water..

Shred the fish with your finger.

Add all the ingredients above into a mixing bowl (except the flour, water and salt fish) then mix thoroughly.

Add the shredded salt fish.

Time for the batter. At this point, add flour.

Slowly add water and stir. Batter looking good!!!!

Now that the batter is ready, heat the coconut oil in a large frying pan or skillet at medium/high heat.

Once the oil is at the right temperate for frying drop rounded spoonfuls of batter into the skillet.

Fry on each side until golden brown and crisp, for about 5 minutes per side. (When they start floating they are ready to flip.)

Lay the cooked Fish cakes/accras on paper towels to absorb the excess oil.

Voila! Serve hot:)
